【摘要】:Theenergyinputratetestisusedtoconfirmthattherapidcookovenisoperatingproperlypriortofurthertesting.Preheatenergyandtimecanbeusefultofoodserviceoperatorstomanagepowerdemandsandtoknowhowquicklytherapidcookovencanbereadyforoperation.Idleenergyrateandpilotenergyratecanbeusedtoestimateenergyconsumptionduringnon-cookingperiods.Cookingenergyefficiencyisapreciseindicatorofarapidcookoven’energyperformancewhilecookingatypicalfoodproductundervariousloadingconditions.Ifenergyperformanceinformationisdesiredusingafoodproductotherthanthespecifiedtestfood,thetestmethodcouldbeadaptedandapplied.Energyperformanceinformationallowsanendusertobetterunderstandtheoperatingcharacteristicsofarapidcookoven.Productioncapacityinformationcanhelpanendusertobetterunderstandtheproductioncapabilitiesofarapidcookovenasitisusedtocookatypicalfoodproductandthiscouldhelpinspecifyingthepropersizeandquantityofequipment.Ifproductioninformationisdesiredusingafoodproductotherthanthespecifiedtestfood,thetestmethodcouldbeadaptedandapplied.1.1Thistestmethodevaluatestheenergyconsumptionandcookingperformanceofrapidcookovens.Thefoodserviceoperatorcanusethisevaluationtoselectarapidcookovenandunderstanditsenergyconsumption.1.2Thistestmethodisapplicabletogasandelectricrapidcookovens.1.3Therapidcookovencanbeevaluatedwithrespecttothefollowing(whereapplicable):1.3.1Energyinputrate(see10.2),1.3.2Preheatenergyconsumptionandtime(see10.2),1.3.3Idleenergyrate(see10.4),1.3.4Pilotenergyrate(ifapplicable)(see)10.5,and1.3.5Cookingenergyefficiency,cooking-loadenergyefficiencyandproductioncapacity(see10.6).1.4Thevaluesstatedininch-poundunitsaretoberegardedasstandard.TheSIunitsgiveninparenthesesareforinformationonly.1.5Thistestmethodmayinvolvehazardousmaterials,operations,andequipment.Thistestmethoddoesnotpurporttoaddressallofthesafetyconcerns,ifany,associatedwithitsuse.Itistheresponsibilityoftheuserofthistestmethodtoestablishappropriatesafetyandhealthpracticesanddeterminetheapplicabilityofregulatorylimitationspriortouse.
